Thinner (as in non-bulky) linens can sometimes be unfolded a bit and laid flat between the mattress and box springs.

I agree that you should really evaluate how much you need to keep. What is the maximum number of guests you will ever have? If you keep enough linens for that maximum, plus one or two extra sets, that should be adequate. It's unlikely that all your guests will need a change of linens at the same time.

Also, you can include your spare sets for your family bedding as part of your guest supply.
